Lunch Log: Week 159

Not much has improved with diversifying from chicken – it’s embarrassing that I’ve fallen into that trap too when I pride myself in trying to have a decent collection of lunchable food. It’s definitely easy to blame the second-lunch project with wraps, and I’ve tried to ensure some variety of flavours to them too – but it’s hard not to imagine:

More than one chicken were killed for their delicious thighs for almost all the lunches I’ve made this week. An F for lack of effort; there are plenty of alternatives that don’t necessarily use an animal protein.

February 22

Definitely worth repeating: roasting a batch of veggies, Mediterranean style. Eggplant, capsicum, zucchini, onion and tomatoes with huge lashings of garlic, olive oil and herbs and spices. The veggies were slow roasted, then mixed with a bit of tomato paste, freshly chopped basil and olives which work well with feta. A very simple pasta lunch, I’m sure my siblings can do it!

February 23

Looking pretty colourful, it appears I’ve covered Japan, Greece, France and Portugal with all the different items; talk about fusion confusion. Lunch is garlic butter purple sprouting broccoli, tomato, piri piri chicken, carottes râpées with basil, kombu no tsukudani and Mediterranean style roast veggies

February 24

It feels like I make 3 lunches: one bento and 2 wraps for Yvan. At least if I get the portions right, I can use some wrap filling for mine. Lunch is bread-and-butter pickles, tomato, steamed broad beans, Mediterranean style roast veggies, spicy chicken karaage and 2 onigiri (hijiki with sesame and yukari; umeboshi).

I’m down to 2 umeboshi left; I don’t think my prunus would produce any fruit to replace them though!

February 25

I should really write down this curry recipe, I think this time round the green chillies really enhance it. Lunch is carottes râpées, tomato, eggplant with soy and lemon dressing, chicken saag, steamed broad beans and Mediterranean roast veggies

February 26

Powering away through the month and my motivation, it’s a wonder there’s more than a single protein-based side with rice. Lunch is spicy chicken, eggplant with soy and lemon, spinach and leek curry and coleslaw.

Oh weekend, start sooner!
