Lunch Log: Week 126

..And back to work it’s refreshing to get more veggies in. This week’s protein is mainly beef mince as it’s easy to get from the local shop. As tasty as it was to indulge in burritos for a few days going back to classics like namul and tamagoyaki (and sushi!) just felt right to keep motivated.

Now if only there were other fishy sushi fillings I can get my paws on to really get in the mood.

I’m back y’all! Normally I’d complain about the lack of meat today but after mostly subsisting on burritos and beer since Friday it’s nice to eat something homemade. Lunch is spring onion tamagoyaki, miso glazed potatoes, fish fragrant eggplant, tomato, pickled radish, beetroot salad and an umeboshi

Still feeling pretty drained; hopefully going veggie today may help out. Well, that’s the excuse for not bothering with a trip to the store. Lunch is pickled radish, soy eggplant, spring onion tamagoyaki, miso shiitake & konnyaku, roast beetroot, tomato and “random greens” namul (cabbage and beetroot leaves)

With desperate times come non-appropriate wrappers.. I’ve been lacking store bought spring roll wrappers but the craving was too strong so once again I’ve used rice paper wrappers. Lunch is lumpia, pickled radish, spring onion tamagoyaki, beetroot & carrot salad, tomato and spinach namul

Tried to go with lots of veg and did the cooking this morning; not too bad for less than an hour plus brewing a filter coffee. Toppings are spinach (not pictured), steamed broccoli, chilli beef & eggplant, spring onion, soft boiled egg and simmered shiitake.

I cheated with a stock cube for the soup: chicken with a “shiitake dashi” and soy base. As much as I like udon this really was too big.. * Burp *

Over ambitious this morning and made lots of sushi, though not as much as originally planned. Lunch is spinach goma-ae, steamed broccoli, tomatoes, spring onion tamagoyaki, carrot salad, mini meatballs and sushi (California rolls, smoked salmon & avocado, inarizushi). The “hamburger” roll is not pictured.. Yes, lots of food today :/
