If you have bushes of parsley and lots of cherry/grape tomatoes in the fridge then this refreshing side salad can be the stone that takes these two birds out!
Just simply chop up parsley, chives/spring onion and the mini tomatoes. Season with salt and pepper and mix through.
This makes a refreshing salad that goes well with seafood and deep-fried dishes or as an alternative to a full-blown salsa (use more tomatoes).
