Lumpia Makizushi

When I look at my sushi books for ‘makizushi’ I find that some of the fillings seemed rather random. In the spirit of randomness, fusion, and perhaps insanity I decided to try rolling (pun intended) with the batch of lumpia I had made.

Lunch contents: quick-pickle cucumber, pickled ginger ‘rose’, steamed broccoli, deep-fried lotus root, carrot ‘flower’, stir-fried green capsicum, lumpia and chive makizushi.

One day scoping the range of goods at the local store I discovered they had lotus root; though it was a small tin I thought I would give it a try. The contents were tiny slices of root in a light brine.. and I was at a loss at what to do except try to apply recipes I intended anyhow despite how minuscule they were. They make the cutest little chips though!
